I’m not here to give you rules, I’m just here to share some of my favourite recipes and hopefully get you cooking more tasty fun food. A lot of my recipes are healthy-ish and a lot of them are healthier/vegetarian versions of classic dishes but that’s just because it’s how I like to eat, not because I’m trying to make you change anything. 

I am SO BORED of the healthy eating conversation- so I urge you to just enjoy the good things in life and be mindful of balance. I think “nutrition” has become a little overcomplicated and makes us feel guilty and sad way too much and way too often. Food is a gift that should be celebrated! Just make sure you eat plenty of vegetables and whole foods because they’re good for your body and your heart and your brain. But also make sure you eat a lot of pizza and ice cream because life is short and PMS is real. 

Spiced Kale Fritters

These are quick easy and delicious.

Goes great with eggs on top and mashed sweet potato underneath!

Saucy Udon Noodles & Veggies

These saucy noodles are so good and so quick. You can chuck veggies in or on, you can have them on the side of some tofu and edamame beans or just on their own for lunch.

Healthier Banana Oat Muffins

Very easy one bowl muffins to grab on the go or jam up with a cuppa.

An easy fresh delicious pesto that goes on anything and everything (but especially good with sweet potatoes and sundried tomatoes)

Easy Protein Pancakes

Because it wouldn’t be fitness without them AM I RIGHT? Honestly though these are simple and fluffy and delicious - would recommend.

Aubergine & Chickpea Stew

This Moroccan inspired stew is sweet, spicy and delicious. Slightly more faff but worth every minute!

 

Kale and tomato relish with polenta

This is an English take on a traditional dish I grew up eating in Zimbabwe. I’ve tried my best to recreate it with available ingredients! V v simple and v v delish!
