Crispy Cauliflower Bites
With a sticky spicy sauce
Serves 2
For the bites:
1 head cauliflower, cut into florets
2 eggs, beaten
1 cup breadcrumbs
2 tbsp almond meal
2 tbsp nutritional yeast
1 tsp smoked paprika
1 tsp garlic powder
pinch cayenne pepper
Salt and pepper
For the sauce:
1 tbsp chipotle paste
1 tbsp tomato puree
1-2 tbsp honey/maple syrup
0.5 tbsp vinegar of choice
Ketchup (optional)
Preheat oven to 220
Mix all the dry ingredients into a bowl
Coat cauliflower florets individually in the egg, making sure to cover well. Then toss in the breadcrumb mixture until generously and thoroughly coated.
Place crumbed florets on a baking tray lined with parchment and spray/drizzle with olive oil.
Pop in the oven for 20 minutes.
Check them at 20 mins - they may need another 5-15 depending on your oven!
While the bites cook make the sauce: put all the ingredients in a saucepan and heat it up until it bubbles and caramelises into a sticky consistency.
Taste it and adjust where necessary - this is where I find a squirt of ketchup often goes in well and if it’s cheating well, I’m not even sorry because it’s delicious.
When the cauliflower is brown and crispy take it out and either drizzle the sauce over the top, or pop it on the side for dipping - there are two types of people in this world and I’m not here to judge.
Goes great with a nice salad! But better with sweet potato chips! Or maybe even in a taco!
